Penne-Wise Pumpkin Pasta Saturday, Dec 27 2008

Penne Wise Pumpkin Pasta - Not quite a traditional recipe, however I have a lot of pumpkin in my freezer and I wanted to try out some new recipes this year. :-) Tim and I both liked it, although we both agreed that it would be better served as a side dish. The pumpkiny taste of the pasta would complement a meal nicely, but is rather overwhelming as a main dish. :-)

My Birthday Friday, Dec 26 2008 

My birthday fell on Thanksgiving this year. We celebrated with my family on Thanksgiving Eve. Mom made me a great salad buffet! Yummy! (I’ve been loving salads recently. :-) ) My salad consisted of lettuce, spicy chicken and eggs…topped with ranch dressing. :-) And for dessert was ice cream. Mom had a lot of flavors, but the one I requested was the pumpkin pie flavor. I enjoy trying out new flavors…let’s just say the pumpkin pie ice cream is a one time purchase. :-)

I was so surprised that Dad got me flowers for my birthday!! They are so pretty with beautiful fall colors. I so enjoy having fresh flowers in the apartment. :-)

On December 2, we celebrated with the  M-Vs…they made me burritos, one of my favorite meals! :-)

And finally on December 18 we were finally able to celebrate just our family. And Tim had a wonderful day planned out. :-)

He set the alarm for 7:00…told me to get ready…and we left the apartment. I had no idea where we were going! :-) We dropped Drew off at the M-Vs and then went out to breakfast. :-) We spent most of the day just relaxing and having fun here at home with Drew, who really enjoyed playing with the wrapping paper. :-) And then Tim also took me out for dinner to a restaurant I’ve been wanting to go to for over two years!! :-) What a fun day. :-)

Snickerdoodles Friday, Dec 19 2008

Snickerdoodles are one of my favorite cookies. So when I was invited to go to a Christmas party and to bring something for a gift exchange, I immediately thought of making cookies. And I eventually landed on an easy snickerdoodle recipe. :-) I had this cute tin left from when someone gave us cookies after Drew was born, so this was an easy gift to make. And I sampled a couple of the cookies…they are really good!

Big Macs Wednesday, Dec 17 2008 

A while back I had been craving a Big Mac…so Tim bought me one. It was sooo good! And I still wanted Big Macs. So Tim and I decided that we had to try this recipe. Tim had a lot of fun making these…and they tasted pretty close to McDonalds Big Macs. I think it mostly tasted fresher than the “real” thing. :-) We will definitely be making these again! :-)

I was really pleased to see that Ralphs had a sale on ground beef this week…buy one get one free. We use ground beef frequently so when it’s on a good sale I like to stock up a little bit. (It ended up being $1.35 a pound after the sale.) So I just ended up doing all of my shopping at Ralphs this week… :-) (And I didn’t get a picture…but here is what I bought)

2 Hunt’s Tomato Sauces $1.00 each (used a $0.40/2 coupon, which doubled)

Using Your Leftovers Friday, Dec 12 2008 

I’m always inspired by posts where ladies share how they use their leftovers to create delicious new meals. Well….this is not one of my fortes. :-) My creativity in the kitchen can sometimes be nil…and I usually end up just planning to eat the same old leftovers again and again until they are gone or thrown out.  Awhile ago I was starting to panic at how full my refrigerator was getting when I realized that we weren’t eating the leftovers fast enough. So in my panic induced state…I came up with…

Broccoli Pasta Casserole :-) (We ate it before I got a picture! :-) This is a variation of a casserole my mom makes. This casserole is normally made with rice, however we had leftover Penne-Wise Pumpkin Pasta. I actually enjoyed this casserole better with the pasta than I do with the rice! So…

Leftover Pasta
Cooked Chicken
Steamed Broccoli
Cream Soup (or a homemade substitute)
Cheese

Put the pasta in the bottome of a baking dish. Layer chicken and broccoli on top of the pasta. Pour soup over casserole and sprinkle with cheese. Bake at 350 until heated through.

And we had these leftover alfredo potatoes (basically twice baked potatoes) in our refrigerator. I didn’t like them after I made them…and Tim had already eaten them as leftovers once. So I added them, as well as some carrots and leftover beef stroganoff, to a potato soup for dinner last night. It was good!! :-)
