Breakfasts can be so much fun to make and eat…but can also be rather difficult to plan out and actually do. :-) So here are some breakfast ideas…

Chocolate Chip Pancakes
Oatmeal Pancakes
Peanut Butter Pancakes

Find a good waffle recipe. It took me awhile to find a good waffle recipe. One that wasn’t too thick and made delicious pancakes. It’s quick to mix up and there’s always leftovers for snacks or to put in the freezer for another breakfast.

Omelets…these are very quick and easy to make and you can put anything in them! I love to use up leftovers in omelets…mexican rice, taco meat and refried beans are good. Saute some veggies…or just make a cheese omelet. Cheese omelets are also good with chili on top. :-)

Smoothies are quick and easy to make. One delicious recipes I found recently for a smoothie is this Groovy Green Smoothie. My midwife told me I need to eat more vegetables so I did a little bit of research and found this gem. Delicious…and a good way to get some spinach. :-)

I’ve had great success freezing french toast. Make a big batch…eat some for breakfast and freeze the rest in a ziploc bag. They heat up nicely in a toaster. :-) It’s also fun to add some variety to french toast by using different kinds of bread…blueberry bread makes great french toast! :-)

Egg sandwiches are good…and then there’s a Barbadosian Sandwich. :-) It’s very simple to make…toast two slices of bread and scramble some eggs. Spread mayonnaise on one side of the toast, add egg and sprinkle with cheese. Yummy!

Oatmeal is a good choice. Since I don’t like the taste of plain oatmeal, I enjoy adding a little bit of peanut butter and maple syrup. Delicious!

Granola is a great quick breakfast. I tried a lot of different granola recipes before I found this one for Vanilla Scented Granola that is just perfect!!

Muffins make great breakfasts…they can be made ahead of time and stored in the refrigerator or freezer. And they work great for us because muffins can also double as snacks for Tim at work. :-)

Restaurant Burritos Thursday, Mar 26 2009

I tried a variation of this recipe a while back and while it wasn’t horrible, it didn’t strick either one of us as really good. We both agreed it needed some modification. So I recently tried my idea again and came up with a great meal! We both thought it was really good and it reminded me of a Mexican restaurant down the street from where I grew up. :-) So I will definitely be making this recipe again!

8 flour tortillas
1 can refried beans
1 pound ground beef (seasoned with taco seasoning)
1 cup of rice (cooked in chicken broth)
cheese
1 large can green chile enchilada sauce

Spread some beans, meat, rice and cheese in a tortilla, roll it up and lay it in a 9×13 pan. When all of the burritos have been made, sprinkle some cheese on top of the tortillas. Pour the enchilada sauce over the burritos. Bake at 350 for 30 minutes.

30 Minute Pizza Crust Wednesday, Mar 25 2009 

One of our favorite meals is pizza…it’s just the perfect meal before a weekend. And leftover pizza the next day is great! :-) However, the pizza dough recipe I used to use just doesn’t work for me anymore. 1) I made the mistake of eating pizza made with that recipe at the beginning of this pregnancy (some of the best advice given to me when I was pregnant with Drew was…don’t eat your favorite foods when you have morning sicknes…or you may never be able to eat it again! :-) …and now the thought of that pizza dough just doesn’t sound good. 2) It took a lot of preparation to mix up and let it rise and what not.

So…

I recently saw this recipe for a 30-minute pizza crust. It is quick and simple and now we can start eating pizza again. :-)

It definitely works for me!

Stromboli Thursday, Mar 19 2009 

I’m always on the lookout for snacks to send with Tim to work. Ones that I know he will enjoy and that will fill him up. :-) Stromboli is a good idea, but one that takes a lot of time. I thought of this idea and decided it wouldn’t hurt to give it a try. :-) This was quick, easy and delicious.

I found a biscuit recipe in one of my cookbooks. I cooked up some breakfast sausage and chopped it up. Mix the sausage with some leftover spaghetti sauce and cheese.

Spray a muffin tin and press your biscuits into the tin…press onto the bottom and up the sides. Put your sausage in the middle of the biscuits. Bake as directed in your biscuit recipe. :-)

Schedule Wednesday, Mar 18 2009 

One thing that has been helpful with managing my time well is a schedule. Invariably without a schedule I would spend too much time on the computer or not have enough things to fill my day. What is working for me now is making a schedule for each week of the month. I have certain jobs I do on each day of the week…every day I do the dishes, clean the kitchen, pick up the apartment, etc. On Tuesday I clean the walls of the bathroom and dust the bedside tables. On Friday I vacuum and clean the toilet, mirrors and counter in the bathroom. So I put each item on its respective day. I leave plenty of space to add other projects as things come up…such as needing to get some baking done, making baby food, correspondance with friends and working on shopping lists. (Sundays and Tuesdays are blank on my schedule because those are usually Tim’s days off and Monday I’m gone all day teaching high school biology.)

Fried Linguine Tuesday, Mar 17 2009 

This is an amazing dinner…one of my favorites! Whenever I can get alfredo sauce on a good sale, I stock up so that we can have fried linguine. :-)

Cooked Linguine (I usually use whatever pasta I have on hand…usually spaghetti, although in this picture I just used some rainbow pasta. :-) )
Veggies (I put squash, red bell pepper, green bell pepper and onions in mine)
Meat (Chicken or Sausage)
Alfredo Sauce

Cook the pasta, heat the sauce and chop the veggies and meat. When it’s all prepared, each person picks the veggies and meat they want and sautes them in a skillet. Add some pasta and sauce and enjoy. :-)
