We missed getting a picture of the chimichangas…but this is the recipe we used.

The freezer is organized and it is so nice to be getting food in there for after the baby is born! :-) The refrigerator is cleaned and organized.

We were set back a little bit this afternoon when the maintenance guy came by to fix three drawers and a leak under the kitchen sink for us. So the only thing we didn’t get done today was CVS and Rite Aid…hopefully tomorrow.

Tim is on his way home from work…and we have to start dinner in about 20 minutes…it was a full day. :-)

Progress Thursday, Apr 23 2009 

We had to stop by Food 4 Less before we could begin the baking…so one errand down! :-)

Then we came home and did quite a bit of baking/cooking.

And we made the baby food…we made some veggies (butternut squash, sweet potatoes, carrots, corn, green bell pepper and onion) and fruit (apples, strawberries and banana).

Big Plans for Today Thursday, Apr 23 2009 

Melinda and Bonnie are out here for a while to help me get some last minute baking and cleaning done before the baby arrives. We have a lot of baking and cooking lined up as well as cleaning and shopping. :-)

For baking we are planning to make:

French Toast (easy breakfast for after the baby comes)
Stromboli (snack for Tim)
Chimichangas (snack for Tim)
Pigs in a Blanket (snack for Tim)
Baby Food (for Drew…we are out. :-) )

For cleaning we need to:

General clean up of the apartment
Organize the freezer
Organize and clean out refrigerator

For shopping we are hoping to go to:

Food 4 Less
CVS
Rite Aid

We’ll see how much of the shopping actually gets done! :-)

Pot Holders Wednesday, Apr 22 2009 

It has been a lot of fun making gifts to give since Drew has been born. You know that any gift that relates to Drew will be a hit with the grandparents! :-) I came up with this idea from a blog post I saw and then adapted it to what I wanted to do. :-)

I used red paint to put Drew’s footprints on muslin squares. I was originally hoping to do his hand prints but figured it would be too much work trying to get him to open his hand to get the print on the fabric…not too mention a little on the messy side! :-) When we did this back in January for my mom he had no problem with his feet getting messy. When we did in in April again for Tim’s mom…he didn’t particularly care for the process. :-)

Then I embroidered Drew’s name and mom’s birthdate on one…and I Love You on the other. I used red fleece for the back and simple red ribbon for the hanger. Once I sewed the muslin to the fabric I stitched right along the edge to give it a more finished look.

While it doesn’t look professional I was pleased with how the turned out. And his feet are really cute! :-)

What Can You Do with Leftover BBQ Pork? Tuesday, Apr 21 2009 

A week ago I made BBQ pork sandwiches, which were really good. However we had a lot of leftovers! So I did a search on-line for some ideas of how to use up leftover BBQ pork.

A couple of nights later I made “fajitas”. I sauteed some onion and green bell pepper in some butter and added the leftover BBQ pork. We ate it in tortillas with cheese. While it didn’t taste like traditional fajitas, we both agreed it was pretty good. And it helped us to use up some leftovers!

The next night, I made baked potatoes and instead of opening two cans of chili, we ate the BBQ pork over the baked potatoes which cheese and ranch dressing. Again, not quite a traditional taste, but a good and filling meal. And now we don’t have oodles of BBQ pork sitting in the refrigerator! :-)

I realized that I have enough in my kitchen to not require a big shopping trip this week. :-) I’m working on trying to clear out my freezer and some cupboard space to get some meals put together for after our baby is born. So that is this week’s menu mission! :-)

He’s a Big Boy! Friday, Apr 17 2009 

It’s hard to believe how big Drew is getting! He is learning and doing so many things!!

1) Last week I was working on putting our laundry away. He had so much fun reaching into the laundry basket and handing me each item of clothing. Now they weren’t always still folded so nicely by the time I got them, but he had a blast helping me. :-)

2) He just recently started putting things “away” by himself. We started noticing that he was not only taking things out of boxes, but he was having fun putting them back in. Big step forward! :-)

3) He’s walking all over the place now and it’s very helpful since he doesn’t have to be carried all of the time.
